Cranberry Oat Bars

Along with my leftover Thanksgiving mashed potatoes (hello mashed potato breakfast muffins!), we had a lot of cranberry sauce left. It was so good I didn't want to waste it. So I made a dessert with what I had in the house, and it was delicious! Whether your cranberry sauce is canned or fresh, you will love these!


Here's how to make them:


Ingredients

  • 1 cup cranberry sauce, room temperature

  • 1 3/4 cups all purpose flour

  • 1 1/2 cups rolled oats

  • 1 cup packed brown sugar

  • 1 1/2 TSP ground cinnamon

  • 1 cup cold butter, cut into 1/2 inch pieces (keep cold in fridge until you use it)

  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 325°F.

  2. Grease a 9" square baking pan

  3. In a food processor (or using a pastry blender), combine the flour, oats, brown sugar and cinnamon and pulse 3 times until blended.

  4. Add the cold butter and pulse again 8-10 times until the mixture looks like pea-sized crumbs.

  5. Take out 1 1/2 cups of the mixture and set aside.

  6. Take the remaining mixture and press into your prepared pan, on the bottom and up the sides of the pan, about 1".

  7. Drop spoonfuls of the cranberry sauce all over the bottom of the crust and use a spoon or spatula to spread evenly to cover the entire crust.

  8. Sprinkle 3/4 cup of the chopped walnuts evenly over the cranberry sauce.

  9. Take the remaining crumb mixture and sprinkle it over the sauce/nuts.

  10. Bake the bars for 50-55 minutes, or until the top is lightly browned.

  11. Transfer the pan to a cooling rack and cool completely for about 2 hours, or you can speed it up by putting it in the fridge. Cooling it will make it easier to cut so it won't fall apart.
